Cookie Dough Bites

Who loves doesn't love cookie dough? Who loves cookie dough, even more, when it's HEALTHY cookie dough? This insanely easy, quick, treat is one for the books. These bites are also NO BAKE and you only need 6 ingredients to make them.

Equipment

  • blender
  • medium-sized mixing bowl
  • parchment paper

Ingredients

  • cups chickpeas drained and rinsed
  • ¼ cup light brown sugar
  • ¼ cup unsweetened vanilla almond milk
  • 2 tsp pure vanilla extract
  • ¼ cup natural peanut butter
  • ½ cup chocolate chips

Instructions

  • Step 1 - add the chickpeas, brown sugar, almond milk, and vanilla extract to a blender.  Blend until smooth.
  • Step 2 - add the peanut butter and blend again! 
  • Step 3 - Pour your mix into a medium-sized mixing bowl and fold in the chocolate chips.  You are more than welcome to eat this deliciousness right away, but I like to put it in the fridge for about an hour. I like to store it in the fridge before making the bites. The cookie dough becomes easier to mold. Cover with plastic wrap when storing in the fridge.
  • Step 4 - Remove from the fridge and roll the cookie dough into bite-sized balls. Store your balls in a tupperware on parchment paper in the fridge. Take one out and pop it in your mouth when you're in the mood for a delicious, satisfying bite. Voila!

Notes

These bites can be stored in an airtight container in the fridge for up to 5 days.
Other variations to try are using sprinkles, chopped nuts, or caramel morsels, just to name a few.
How can the kids help?
  • Have your child help you dump all the ingredients for the cookie dough into the blender. Teach them the measurements as you add each ingredient.
  • After you fold in the chocolate chips, make sure you let each of your kids get a nice spoonful of cookie dough out of the blender and devour every bite ;)
  • Teach your child how to roll the bites into balls using clean hands.
