Almond Cookie Tart with Fruit

Ingredients

  • 2 ½ cups rolls oats or old fashioned oats
  • cups unsalted slivered almonds
  • ½ cup pure maple syrup plus 3 tbsp divided
  • 1 tsp pure vanilla extract
  • ¾ cup kosher salt
  • 8 tbsp unsalted butter, cold
  • 1 large egg whisked
  • 3 cups fresh berries your choice
  • ½ cup plain Greek yogurt
  • 1 cup heavy cream

Instructions

  • Preheat oven to 350 °. Line a baking sheet with parchment paper. Combine oats and almonds in a blender or food processor and pulse until they're the texture of sand.
  • Add ½ cup maple syrup, the vanilla extract, and salt. Then add butter, cut into even slices. Pulse until combined.
  • Turn dough out onto prepared baking sheet and using wet hands press out into a rectangle and brush with the egg.
  • Bake the crust until browned, rotating halfway through, about 25 minutes.
  • Let cool 10 minutes before transferring to a cutting board using 2 spatulas or one large one.
  • Before serving, combine cream and the remaining 3 tbsp of maple syrup in a large mixing bowl and whisk until stiff peaks form. Gently fold in yogurt. Spread the cream over the crust and arrange with the cut up berries!
