Preheat oven to 375 degree farenheit. Line a baking sheet with a cooling rack and spray with coconut cooking spray. Set aside.
In a shallow bowl mix together panko, garlic powder, onion powder, salt, pepper, adobo, and cheese.
In a separate small bowl, whisk the egg.
Use a cutting board to trim the fat from the chicken and cut into nugget sizes, about 2 inches by 2 inches.
Dip the chicken into the egg, then the panko mix, then the prepared baking sheet.
Continue until all pieces are on the pan. Bake for 25 min.
