Crack Chicken Stuffed Peppers

Baked red bell peppers stuffed with crack chicken and sprinkled with reduced fat shredded cheese and crispy turkey bacon.

Ingredients

  • 1 lb. chicken breast boiled and shredded
  • ½ cup reduced fat shredded cheese your choice, I used cheddar
  • 4 pieces turkey bacon cooked and chopped
  • 3 red bell peppers sliced lengthwise and seeds removed
  • ¼ cup plain cottage cheese
  • ¼ cup plain greek yogurt
  • 1 tsp. garlic salt
  • 1 tsp. onion powder
  • 1 tsp. ground black pepper
  • 1 tsp. parsely

Instructions

  • Preheat oven to 450 degrees. Place chicken in a pot of boiling water for 10 to 15 minutes, or until cooked through.  Drain and shred with 2 forks.  Set aside
  • Meanwhile, cook the turkey bacon.  Once cooked place on plate lined with paper towels to absorb any grease.  Chop turkey bacon into pieces and set aside. 
  • Mix cottage cheese, yogurt, garlic salt, onion powder, parsley, and ground black pepper in a blender until smooth. 
  • Combine the shredded chicken with the sauce and stir until mixed through.  
  • Scoop crack chicken into bell peppers and top with cheese and turkey bacon. Cook for 15 minutes, or until peppers are tender.
