½cupreduced fat shredded cheese your choice, I used cheddar
4piecesturkey baconcooked and chopped
3red bell pepperssliced lengthwise and seeds removed
¼cupplain cottage cheese
¼ cup plain greek yogurt
1tsp.garlic salt
1 tsp.onion powder
1tsp.ground black pepper
1tsp.parsely
Instructions
Preheat oven to 450 degrees. Place chicken in a pot of boiling water for 10 to 15 minutes, or until cooked through. Drain and shred with 2 forks. Set aside
Meanwhile, cook the turkey bacon. Once cooked place on plate lined with paper towels to absorb any grease. Chop turkey bacon into pieces and set aside.
Mix cottage cheese, yogurt, garlic salt, onion powder, parsley, and ground black pepper in a blender until smooth.
Combine the shredded chicken with the sauce and stir until mixed through.
Scoop crack chicken into bell peppers and top with cheese and turkey bacon. Cook for 15 minutes, or until peppers are tender.
