Easter Blondies

A healthy version of blondies made with whole wheat flour and light brown sugar for the sweet, moist flavor on the inside.

Equipment

  • Different size mixing bowls
  • sifter or a colander will also work
  • 9 x 13 inch glass baking dish
  • spatula
  • mixing spoons
  • whisk

Ingredients

  • cup unsalted butter melted, if measuring out a stick that's one whole stick for 8 tbsp. then 2 more tbsp plus 2 tsp from another stick.
  • 2 cups light brown sugar
  • 3 eggs
  • 1 package m & m's one 10 oz bag.
  • cup whole wheat flour
  • tsp baking powder
  • ½ tsp kosher salt
  • 1 cup walnuts optional and can use any nut of choice. Chopped or blended.
  • coconut cooking spray

Instructions

  • Preheat oven to 350°. Grease a 9 x 13 in glass baking dish with cooking spray or butter and set aside.
  • In a small mixing bowl, melt your butter. Mix in sugar and eggs. Whisk together until well combined.
  • In a separate large bowl, sift together the flour, baking powder, and salt. Pour the wet ingredients into the dry ingredients and mix until well combined.
  • Fold in the m & m's and nuts (optional). Save a few m&m's to sprinkle on top before baking.
  • Dump batter into prepared baking dish and press down with a spatula to make the top an even layer. Press extra m & m's into the top so you can see them.
  • Bake for 25 minutes. Remove from oven and let cool completely. Cut into squares and serve with an Easter smile.

Notes

How can my kids help?  Have them help you sift the flour.  They can help whisk the ingredients together too.  They can also push in all the extra m&m's before baking.  That was my kid's favorite part ;)
Blondies should be stored in an airtight container at room temperature for up to five days. The bars may also be kept in the refrigerator for up to a week.
