One Pan Baked Fish Tacos

Loaded with flavor and only takes 30 minutes! Easy and Healthy fish tacos coming your way!

Ingredients

  • 2 white fish fillets
  • ½ bell pepper chopped and seeds removed
  • 1 avocado sliced
  • whole wheat or corn tortillas
  • ½ tsp ground black pepper
  • ½ tsp kosher salt
  • ½ tsp paprika
  • ½ tsp oregano
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp cumin
  • 1 tbsp avocado or coconut oil
  • plain greek yogurt for topping
  • salsa for topping

Instructions

  • Preheat oven to 375°. In a small mixing bowl combine all seasonings.
  • In another small mixing bowl toss bell peppers with olive oil. Add ½ the seasoning mix to the bowl and toss to combine. Coating the peppers with the seasonings.
  • Meanwhile, line a baking pan with parchment paper and lay the fish on top. Create a rub with the remaining ½ of the seasonings and rub onto the fish creating a coating.
  • Dump the bowl of peppers onto the same pan with the fish creating a single layer.
  • Bake for 25 to 30 minutes.
  • Remove from oven and cut up fish with a fork before eating.
  • Add the fish and peppers to a tortilla or in a bowl and top with avocado. Also top with salsa and plain greek yogurt for a yummy topping!

Notes

What can your kids do?
Help measure out the ingredients and mix the seasonings. I bought my daughter a children's set of kitchen tools.  The set comes with a knife.  So, she has been learning to chop veggies with my supervision, of course!
