Almond Cookies

These are crunchy and nutty and the the almond flour makes them gluten-free.

Ingredients

  • 1 ¾ cup almond flour
  • ¼ tsp baking soda
  • ¼ tsp kosher salt
  • 3 tbsp coconut oil melted
  • ¼ cup pure maple syrup
  • ¼ cup unsweetened applesauce
  • ½ cup dark chocolate chips optional

Instructions

  • Preheat oven to 350 °. Line a baking pan with parchment paper.
  • In a small bowl, whisk together the almond flour, baking soda, and salt. Set aside.
  • In a separate small bowl, combine the coconut oil, maple syrup, and applesauce.
  • Add the flour mixture to the applesauce mixture and stir well until dough is formed.
  • Fold in chocolate chips, if desired.
  • Drop spoonfuls of dough onto prepared baking sheet. Bake for 7 to 10 minutes until golden brown.

Notes

Note:  Store in an airtight container at room temperature for up to 3 days.
What can my kids do?  What can't they do with this one?  I even had my one year old helping dump in the ingredients and stir.
