Preheat oven to 350 °. Line a baking pan with parchment paper.
In a small bowl, whisk together the almond flour, baking soda, and salt. Set aside.
In a separate small bowl, combine the coconut oil, maple syrup, and applesauce.
Add the flour mixture to the applesauce mixture and stir well until dough is formed.
Fold in chocolate chips, if desired.
Drop spoonfuls of dough onto prepared baking sheet. Bake for 7 to 10 minutes until golden brown.
