Creamy Cucumber, Tomato, and Chickpea Pasta Salad
A mix of cool, crunchy vegetables added with chickpea pasta gives this salad a satisfying bite and makes the perfect potluck dish!

- ½ cup light mayonnaise
- 1 cup chickpea pasta cooked and cooled
- ½ cup crumbled feta cheese
- 1 tbsp chives plus more for garnish
- 1 tbsp dill plus more for garnish
- 1 tbsp lemon juice
- ½ tsp kosher salt
- ¼ tsp ground black pepper
- 1 large cucumber peeled and diced
- 1 pint cherry tomatoes quartered
- ½ medium red onion finely diced
Whisk together mayo, feta, chives, dill, lemon juice, salt, and pepper in a large mixing bowl.
Add cucumber, tomatoes, onion, and chickpea pasta and toss to coat.
Garnish with chives and dill, if desired.
