Ingredients

  • ½ cup light mayonnaise
  • 1 cup chickpea pasta cooked and cooled
  • ½ cup crumbled feta cheese
  • 1 tbsp chives plus more for garnish
  • 1 tbsp dill plus more for garnish
  • 1 tbsp lemon juice
  • ½ tsp kosher salt
  • ¼ tsp ground black pepper
  • 1 large cucumber peeled and diced
  • 1 pint cherry tomatoes quartered
  • ½ medium red onion finely diced

Instructions

  • Whisk together mayo, feta, chives, dill, lemon juice, salt, and pepper in a large mixing bowl.
  • Add cucumber, tomatoes, onion, and chickpea pasta and toss to coat.
  • Garnish with chives and dill, if desired.
