Chocolate Chickpea Brownies

Super fudgy chocolatey healthy brownies made with NO flour!

Equipment

  • blender
  • small pot
  • 9 x 9 inch square baking pan

Ingredients

  • 1 can chickpeas drained
  • 2 over ripe bananas
  • 1 cup old fashioned oats
  • ¼ tsp kosher salt
  • 1 large egg
  • 1 tsp pure vanilla extract
  • 1 cup semi-sweet chocolate chips
  • ½ cup unsweetened cocoa powder
  • 1 tbsp nut milk

Instructions

  • Preheat oven to 350°. In a blender add chickpeas, bananas, oats, salt, egg, and vanilla extract and blend until it forms a smooth consistency.
  • In a small pot on low heat add chocolate chips, cocoa powder, and nut milk. Cook until powder is blended in and chocolate chips are melted. Whisk slowly, often, to make sure the chocolate doesn't burn.
  • Remove from heat and pour in the chickpea mixture and stir until well combined.
  • Spray a 9 x 9 inch baking dish with cooking spray and add the brownies batter.
  • Bake for 25 to 30 minutes or until cooked through.
  • Let cool completely and then cut into squares before serving!

Notes

Note:  You can sprinkle powdered sugar on top when finished or some chopped walnuts or extra chocolate chips.
 
What can my kids do?  Have them add all ingredients to the blender and press the buttons.
