For skinny mashed potates:Put potatoes and garlic in a large pot filled with water. Bring to a boil. Cover; reduce heat to low and continue simmering for about 20 minutes or until potatoes are fork tender.
Drain potatoes and garlic and put them back in the pot. Add Greek yogurt, chicken broth, nut milk, butter, salt, and pepper and using a masher, mash until a creamy potato is formed. Season to taste with more salt and pepper, if desired.
For the cheeseburger pie:Preheat oven to 350°.In a large non-stick skillet cook ground turkey and onion until meat is brown and onion is tender. Drain off fat using a colander and return to pan. Add salt, pepper, and garlic powder.
Stir in green beans, soup, and worcestershire sauce. Stir to combine. Pour into a greased 2-quart rectangular baking dish sprayed with cooking spray.
Spoon skinny mashed potatoes in mounds on top of the ground turkey mix. Lay pieces of American cheese on top of the skinny potatoes. Bake, uncovered in for 30 to 35 minutes or until cheese is bubbly.
Notes
How can my kids help? Have them measure out all ingredients to make skinny mashed potatoes. Give them the masher and tell them to mash away :) They can also help layer the American cheese on top.
