Stuffed Avocado Tacos

A healthy way to have your Taco Tuesdays with less carbs and more healthy fats :)

Ingredients

  • 1 tbsp avocado oil
  • 1 lb ground turkey
  • ¼` cup chopped onion
  • ½ tsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • 1 tsp paprika
  • ¼ tsp kosher salt
  • ¼ tsp ground black pepper
  • ¼ cup low-sodium beef broth
  • ½ cup low-sodium black beans
  • ¼ cup salsa
  • 1 tsp lime juice
  • 2 ripe avocados halved and pitted
  • ½ cup shredded Mexican cheese blend
  • ½ cup plain greek yogurt

Instructions

  • Start off by heating oil in a medium non-stick skillet over medium-high heat. Add ground turkey and onion and cook until no longer pink and the onion is softened; about 10 minutes.
  • Drain then add black back to pan and pour in the low-sodium beef broth.
  • Next, add the chili powder, cumin, oregano, onion powder, garlic powder, salt, pepper, and paprika. Stir to combine.
  • Then, stir in the black beans and salsa and cook until heated through; about 5 minutes. Cut the avocados in half; lengthwise and scoop out the flesh. Transfer the flesh to a small bowl and add the lime juice. Mash with a fork until smooth. Mix in a pinch of salt.
  • Fill each avocado with the turkey mix and top with the cheese, avocado, and plain greek yogurt.

Notes

How can my kids help?  Have your kids mix in all the seasonings and mash up the avocado :)
