Roasted Broccoli Grilled Cheese

The perfect comfort dish for those crisp fall nights!

Equipment

  • baking tray
  • large non-stick skillet
  • mixing bowls

Ingredients

  • ½ tsp kosher salt
  • ¼ tsp ground black pepper chopped into bite sized pieces
  • 1 medium head of broccoli
  • 2 tbsp unsalted butter softened
  • 3 tbsp avocado oil or olive oil
  • 2 tbsp avocado mayo or regular mayo
  • 8 slices of your favorite bread
  • 8 slices American cheese

Instructions

  • Step 1 - Preheat oven to 400°. Chop your broccoli into bite-sized pieces
  • Step 2 - In a large bowl, combine your broccoli, oil, salt and pepper.  Stir to combine and place on a sheet pan. Roast for 8 to 10 minutes.  
  • Step 3 - Then, spread the softened butter on the outside of your bread and the mayo on the inside of your bread. Lay the cheese on top of the mayo and then spread the broccoli on top of the cheese and top with another piece of cheese so the broccoli lays between 2 pieces of cheese. Top the second piece of cheese with the other piece of bread, keeping the butter side on the outside.
  • Step 4 - Heat a flat pan or skillet to medium-low heat. Place each grilled cheese on the pan and cook until the butter has crisped the bread and the cheese has melted; about 5 minutes per side.
  • Step 5 - Serve with my super crispy sweet potato fries for the perfect meal!

Notes

How can my kids help?   Have them help you measure and mix the mayo and butter and lay the cheese onto the bread.
