Sweet and Sour Chicken w/ Zoodles

This is a healthy version of your local Chinese food's rendition of their own sweet and sour chicken.

Ingredients

  • 2 large zucchini spiralized
  • 1 tbsp avocado oil
  • 1 lb boneless skinless chicken breast trimmed and cut into 1 inch pieces
  • ½ cup orange juice
  • 6 cups small broccoli florets
  • 3 tbsp rice vinegar
  • 2 tbsp coconut aminos
  • tbsp cornstarch
  • 2 tbsp pure honey
  • 1 tbsp minced garlic
  • ½ tsp kosher salt

Instructions

  • Heat a large non-stick skillet over medium-high heat. Add your chicken and cook; stirring occasionally, until browned and cooked through, about 10 minutes.
  • Transfer chicken to a plate and keep warm.
  • Add orange juice to skillet and cook; scraping up the brown bites, for about 1 minute. Add broccoli; cover and cook for about 5 minutes, until broccoli is tender. Next, add in your zoodles and stir until well combined, cook for 3 more minutes.
  • Meanwhile, whisk vinegar, coconut aminos (or low-sodium soy sauce), honey, garlic, and salt in a skillet. Bring to a boil and cook for about 1 more minute until the sauce has thickened. Add the chicken back in and combine. Cook until heated through.

Notes

How can my kids help?  Have your child stir and combine the vinegar mixture before adding it to the skillet.
