Preheat oven to 350° and line a baking sheet with foil.
In a small pot add ghee or butter, parsley, garlic, lemon zest, salt, and pepper. Cook until ghee or butter is melted. Simmer for about 5 minutes so flavors blend together.
Put shrimp into a bowl and pour garlic butter over shrimp. Let marinade for 10 minutes.
Lay shrimp onto prepared baking sheet and bake for 9 to 13 minutes.
Serve shrimp over favorite veggie or whole wheat starch!
