8cupsfresh chopped apples and pearsor any fruit you have on hand
1cupdried craisinsor any dried fruit you have on hand
2tbspcornstarch
2tbsplemon juice
1cupold fashioned oats
¼cupchopped nutspecans, walnuts, almonds
½cupwhole wheat flour
½cuplight brown sugar
½cupavocado oilcan use olive oil
¼cuppure maple syrup
¾tspcinnamon
½tspkosher salt
Instructions
Preheat oven to 350 °.
Combine fruit and dried fruit with cornstarch and lemon juice in a large mixing bowl. Toss to combine then spread in 9 x 13 inch baking dish.
Next, combine oats, nuts, flour, sugar, cinnamon, salt, oil, and maple syrup in a medium bowl. Mix everything to combine really well! Sprinkle evenly over fruit.
Bake for 30 to 40 min. Let cool 10 minutes before serving. Eat as is or over some coconut milk yogurt!
