Summer is the perfect time to embrace the fresh ingredients used to make this deliciously easy Caprese Pasta Salad! This vibrant, refreshing recipe combines the flavors of a classic caprese salad with the heartiness of a whole-grain pasta, making it both satisfying and healthy.
1 lbwhole wheat pastaChoose your favorite. I recommend cavatappi, rotini, fusilli, farfalle, orecchiette, penne, or casarecce.
¼cupextra virgin olive oil
¼cupbalsamic vinegar
2tbsp minced garlic
2cupscherry tomatoes
½tspsalt
½tspground black pepper
1tspItalian seasoning if you do not have Italian seasoing you can make it from basil, oregano, rosemary, thyme, margoram, and a garlic powder.
¼cupchopped fresh basil
8ozmini mozzarella balls
¼cupfinely grated parmesan cheesemore for sprinkling on top before serving
½lemonfreshly squeezed
Instructions
Step 1 - Bring a large pot of water to a boil. Add the pasta and cook according to package directions. Drain in a colander and run cold water on it to cool it off, and set aside.
Step 2 - Meanwhile, in a small mixing bowl or a jar with a lid, add olive oil, balsamic vinegar, lemon juice, Italian seasoning, salt, and pepper. Mix well to combine.
Step 3 - In a large bowl, combine cooked pasta, sliced tomatoes, parmesan cheese, mozzarella balls, basil, and dressing. Serve!
