Linguine with Chicken Sausage and Broccoli Rabe

A creamy, but healthy comfort food dish!

Equipment

  • cast iron skillet
  • cutting board
  • large pot for boiling pasta
  • paring knife
  • tongs
  • wooden spoon

Ingredients

  • 1 tsp kosher salt
  • 1 tsp ground black pepper
  • 2 tbsp avocado oil
  • 8 oz Italian chicken sausage
  • 1 small onion diced
  • 2 garlic cloves minced
  • 12 oz whole wheat linguine
  • 1 bunch broccoli rabe stems trimmed and discarded
  • 1 bunch chopped kale or spinach substitute for broccoli rabe
  • 1 oz parmesan cheese
  • ¼ cup dry white cooking wine

Instructions

  • First, bring a large pot of salted water to a boil.
  • Meanwhile, heat oil in a cast iron skillet. Remove casings from sausage and cook until browned and in crumbles. Breaking it up with a wooden spoon as it cooks.
  • Add onion and garlic and cook until translucent and fragrant, about 5 minutes, stirring occasionally.
  • Add leafy green of choice and season with salt and pepper. Cook for another 8 minutes until wilted, stirring to combine.
  • Meanwhile, add the linguine to the boiling water, stirring occasionally to prevent sticking, another 8 minutes.
  • Then, drain the linguine and add it to the sausage mixture and toss to combine using tongs.
  • Add half the cheese and dry white wine. Stir and cook until the cheese is melted.
  • Divide evenly among serving bowls and top with more cheese, if desired.
