1bunchchopped kale or spinach substitute for broccoli rabe
1ozparmesan cheese
¼cupdry white cooking wine
Instructions
First, bring a large pot of salted water to a boil.
Meanwhile, heat oil in a cast iron skillet. Remove casings from sausage and cook until browned and in crumbles. Breaking it up with a wooden spoon as it cooks.
Add onion and garlic and cook until translucent and fragrant, about 5 minutes, stirring occasionally.
Add leafy green of choice and season with salt and pepper. Cook for another 8 minutes until wilted, stirring to combine.
Meanwhile, add the linguine to the boiling water, stirring occasionally to prevent sticking, another 8 minutes.
Then, drain the linguine and add it to the sausage mixture and toss to combine using tongs.
Add half the cheese and dry white wine. Stir and cook until the cheese is melted.
Divide evenly among serving bowls and top with more cheese, if desired.
