Healthy Blueberry Donuts with Homemade Vanilla Glaze

Gooey from the blueberries, moist and sweet to the taste!

Ingredients

  • For the donuts:
  • cup whole wheat flour
  • 1 cup almond flour
  • 1 tsp baking powder
  • ½ tsp salt
  • ¼ cup pure maple syrup
  • 1 egg
  • 1 cup unsweetened vanilla almond milk
  • 1 tsp pure vanilla extract
  • 2 tbsp coconut oil melted
  • 1 to 2 cups fresh blueberries
  • cooking spray if using a donut mold
  • For the homemade vanilla glaze:
  • 1 cup powdered sugar
  • ½ tsp pure vanilla extract
  • ¼ cup water

Instructions

  • Preheat oven to 350°. Spray a donut mold with cooking spray or line 2 baking trays with parchment paper and set aside.
  • In a large bowl combine all dry ingredients; whole wheat flour, almond flour, salt, and baking powder. Whisk to combine.
  • In a second medium sized bowl combine all wet ingredients; egg, milk, vanilla extract, pure maple syrup, and coconut oil. I recommend adding the coconut oil last so it doesn't harden.
  • Pour wet ingredients into dry ingredients and mix to combine. Fold in blueberries.
  • Pour batter into the donut mold or using a plastic sandwich bag, cut a tiny hole in the bottom corner. Scoop the batter into the bag and squeeze out the batter onto the prepared baking pan forming a circle to shape a donut. Top donuts with more blueberries, if desired.
  • Place donut molds on top of a baking tray for easy removal from the oven and bake for 15 minutes.
  • Meanwhile to make the glaze; in a small bowl mix powdered sugar, water, and pure vanilla extract. Mix well! I find it easier to drizzle the glaze on top of the donuts if you use a mixing bowl with a spout for easy pouring.
  • Remove donuts from oven and while still warm drizzle the glaze on top. Place donuts on a cooling rack and let cool.
  • Tip: Eat at least one donut warm :)

Notes

How can my kids help?  Have them help toss in all the ingredients and mix, mix, mix! They can also help you fill up those donut molds or if using a bag they can help squeeze out the dough to form donuts. 
Store in an airtight container in the fridge for up to 5 days. You can place a piece of parchment paper in between each layer of donuts so they don't stick to one another because of the glaze or you can freeze them in a freezing bag for up to 3 months.
You can eat your donuts straight out of the fridge or you can microwave each one for 10 to 15 seconds if you prefer them warm.
