Baked Chicken Caprese

A perfect combination of ingredients made in a healthy way and baked to perfection.

Ingredients

  • 5-7 oz chicken breast
  • 2 tsp italian seasoning
  • 2 tsp kosher salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp ground black pepper
  • 1 tbsp avocado oil
  • 8 oz fresh mozzarella sliced evenly into pieces
  • 2 vine ripened tomatoes sliced into ½ inch slices
  • fresh basil to taste
  • fresh oregano to taste
  • aged balsamic vinegar

Instructions

  • Preheat oven to 375°. First, start off by placing your chicken between 2 pieces of saran wrap and pounding it with a meat mallet until all pieces are 1 inch thickness.
  • Continue until all chicken is used and set aside.
  • Brush chicken with your avocado oil.
  • In a small bowl combine italian seasoning, kosher salt, garlic powder, onion powder, and ground black pepper. Sprinkle evenly over chicken pieces to coat evenly. Lay your chicken on a baking tray lined with parchment paper.
  • Bake for 3o minutes.
  • Remove and top with your tomatoes and cheese. Place back in oven for another 5 minutes, or until cheese is melted. Remove from oven and drizzle with the balsamic vinegar and seasoning with basil and oregano to taste.
