This baked chicken caprese was super moist and a winner in my home! You can easily grill this chicken instead of baking, which is what I wanted to do. So, it decided to rain the day I made this dish. I wasn't in the mood to get soaked so I changed from grilling to baking.
When the weather warms up in spring I'm going to try it again, but grill it 🙂 My advice either way you decide to make the chicken is to pound it first. First, place it between 2 pieces of saran wrap. Next, using a meat mallet hammer away until the chicken is less than 1 inch. If you need a good meat mallet here is one I recommend. Kitchen Aid Gourmet Meat Tenderizer - $14.99!
Ingredients to make this meal
You will need four 5-7 oz chicken breasts, pounded to even thickness, 2 tsp italian seasoning, 2 tsp kosher salt, 1 tsp garlic powder, 1 tsp onion powder, 1 tsp ground black pepper, 1 tbsp avocado oil, 8 oz fresh mozzarella, sliced into even pieces, 2 vine ripened tomatoes, sliced into ½ inch slices, fresh basil, to taste, and aged balsamic vinegar.
This balsamic vinegar is the best I've ever had and I strongly recommend giving it a go. Due Vittorie Oro Gold Balsamic Vinegar imported from Italy with Pourer - $22.73! Fresh chopped oregano and basil to taste.
How to make this meal
Preheat oven to 375 °. First, start off by placing your chicken in between 2 pieces of saran wrap and pounding it with a meat mallet. Pound it until it is 1 inch thickness. Set aside and repeat with remaining chicken. Next, combine italian seasoning, kosher salt, garlic powder, onion powder, and ground black pepper in a small bowl. Stir to combine. Sprinkle the avocado oil onto the chicken and brush it on to coat.
Pour your seasoning onto the chicken and coat evenly. Lay your chicken on a baking pan lined with parchment paper and bake for 30 minutes. Remove from oven and top each piece of chicken with tomatoes, thinly sliced, and mozzarella cheese, also cut into slices. Place back in oven for another 5 minutes until cheese is melted. Remove from oven and plate your chicken then drizzle it with your balsamic vinegar and sprinkle with oregano and basil to taste.

Instructions
- Preheat oven to 375°. First, start off by placing your chicken between 2 pieces of saran wrap and pounding it with a meat mallet until all pieces are 1 inch thickness.
- Continue until all chicken is used and set aside.
- Brush chicken with your avocado oil.
- In a small bowl combine italian seasoning, kosher salt, garlic powder, onion powder, and ground black pepper. Sprinkle evenly over chicken pieces to coat evenly. Lay your chicken on a baking tray lined with parchment paper.
- Bake for 3o minutes.
- Remove and top with your tomatoes and cheese. Place back in oven for another 5 minutes, or until cheese is melted. Remove from oven and drizzle with the balsamic vinegar and seasoning with basil and oregano to taste.
