Ingredients

yellow onion
diced

garlic cloves

avocado oil

low-sodium chicken broth

cans of cannellini beans
drained and rinsed

can of corn
drained

ground oregano

ground chili powder

cumin

paprika
ground black pepper
to taste
kosher salt
to taste

chicken breasts
boneless, skinless

15 oz
can of coconut milk
plain greek yogurt
optional topping
salsa
optional topping
avocado
optional topping
reduced fat shredded cheese of your choice

Instructions
Drizzle oil onto bottom of slow cooker so ingredients don't stick.
Lay chicken on the bottom first, then add the rest of your ingredients.
Set your cooker on high for 4 hours or low for 8 hours.
Scoop into serving bowls and top with your favorite toppings!
