    Crockpot White Bean Chicken Chili

    If you love chili, you need this healthy white bean chicken chili in your life.  Chili reminds me of the winter season, especially the ground turkey chili I am usually making.  I needed some warm weather inspiration to come up with this chili.  It's made with cannellini beans and shredded up chicken, but ground chicken would also do the trick. 

    This was the first time I've made this yummy dish and I think next time I will try the ground chicken.  My husband is also a picky eater when it comes to certain dishes, but he loved this white chicken chili crockpot recipe.

    Ingredients to make this crockpot meal

    You will need the following ingredients to make this dish!

    1. 1 medium yellow onion, diced
    2. 2 garlic cloves, minced
    3. 1 tbsp of avocado oil
    4. 2 cups of low-sodium chicken broth
    5. two 15 oz cans white cannellini beans, drained and rinsed
    6. one 15 oz can of corn, drained
    7. 1 tbsp ground chili powder
    8. ¾ tsp ground oregano
    9. 1 tbsp cumin
    10. 1 tsp paprika
    11. ground black pepper and kosher salt to taste
    12. 1 lb boneless, skinless chicken breasts
    13. one 15 oz can of coconut milk

    Toppings:  plain greek yogurt, salsa, avocado, reduced fat shredded cheddar or any cheese of choice (all optional)

    How to make this meal

    First, drizzle oil on bottom on crock pot so ingredients don't stick.  Next, lay chicken in first, then add the rest of your ingredients.  Set it on high for 4 hours or low for 8 hours.  Finally, scoop chili into serving bowls and top with your favorite ingredients.  This is the best white chicken chili recipe!

    What makes this chili so healthy

    First of all, cannellini beans are the main ingredient in this crock pot dish!  They are loaded with fiber and protein and are nutrient dense.  According to the Dietary Guidelines for Americans nutrient dense refers to foods that provide vitamins, minerals, and other health-promoting components and have little added sugars, saturated fat, and sodium. 

    Also,  if you are following a healthy U.S. style dietary pattern at the 2,000 calorie level then you should be eating 1 ½ cups a week of beans, peas, or lentils!  Chicken is also another great source of protein and for protein an individual should try and consume 5 ½ ounces a day!  This meal right here will help you get the correct amount of vitamins and nutrients you need in your body!

    Ingredients

    • 1 medium yellow onion diced

    Instructions

    • Drizzle oil onto bottom of slow cooker so ingredients don't stick.
    • Lay chicken on the bottom first, then add the rest of your ingredients.
    • Set your cooker on high for 4 hours or low for 8 hours.
    • Scoop into serving bowls and top with your favorite toppings!

    Notes

    How can my kids help?  Have your kids add all the ingredients into the crock pot!
