Cheesy Chicken Broccoli Rice Casserole

Ingredients

  • 1 lb chicken breast boneless, skinless, fat-trimmed, and either shredded or diced
  • 3 tbsp whole wheat flour
  • 3 tbsp unsalted butter
  • 2 cups brown rice cooked
  • 1 cup unsalted chicken broth
  • 1 cup plain Greek yogurt or sour cream
  • 1 cup 2% milk divided
  • 2 cups broccoli florets frozen or fresh
  • 2 cups cheddar cheese shredded
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 1 tbsp garlic powder
  • 1 tsp onion powder

Instructions

  • Step 1 - Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 x 13-inch baking dish, and set aside. In a small saucepan, add the 3 tbsp of unsalted butter. Once melted, mix in the flour and whisk until a roux forms. Then add in the chicken broth and ½ cup of milk, and season with salt and pepper. Bring to a boil, then reduce the heat and simmer for 2 minutes, stirring often. Remove from heat and let sit for another 5 minutes before adding to other ingredients.
  • Step 2 - In a large bowl, combine chicken, rice, broccoli, homemade sauce, plain Greek yogurt or sour cream, milk, seasonings, and 1 ½ cups of shredded cheese. Mix well to combine.
  • Step 3 - Spread mixture evenly into the prepared baking dish. Top with the remaining cheese.
  • Step 4 - Baking uncovered 25 - 30 minutes or until hot and bubbly and cheese is golden and melted.

Notes

How can my kids help?
Have them add all the ingredients to the bowl. They can also sprinkle the cheese on before baking. 
Can I use rotisserie chicken?
Of course! It's a major time saver, which I know I am always looking to do, and it adds lots of flavor.
How can you store leftovers?
Store in an airtight container for up to 3 days.
