Crispy BBQ Chicken Pizza (using a pizza stone)

This BBQ Chicken Pizza is a favorite in my house. It's smoky, slightly sweet, packed with protein, and has that perfectly crispy crust that only a pizza stone can deliver.

Equipment

Ingredients

  • pizza dough homemade or store-bought
  • ½ to ¾ cup BBQ sauce homemade or store-bought
  • 1½ to 2 cups chicken cooked and shredded
  • 1½ to 2 cups mozzarella cheese shredded or freshly sliced
  • 1 tsp garlic powder
  • 1 tsp basil
  • 1 tsp oregano
  • ½ cup red onion diced
  • ½ cup green onion diced (optional)
  • flour used to help the dough not stick while kneading
  • olive oil for brushing the outside of the dough to help the crust crisp up.

Instructions

  • Step 1 - Put the pizza stone in a cold oven. Preheat the oven to 500 degrees Fahrenheit. Let the pizza stone heat for at least 30 minutes once the oven reaches the desired temperature. Place your chicken in a large saucepan, season with your favorite spices, and cover with 1 inch of water. Bring to a boil, then reduce the heat and cover with a lid, and let simmer for 10 - 15 minutes.
  • Step 2 - Remove from the stove and let it rest for 5 minutes. Remove the chicken from the water and shred using 2 forks. Once the chicken is shredded, toss it with the BBQ sauce. Set aside.
  • Step 3 - On a lightly floured surface, place your pizza dough down and roll it out using a roller until it forms about a 12 - 14-inch circle. Place the dough onto a baking sheet or cutting board dusted with flour and lightly brush the outer crust with the olive oil.
  • Step 4 - Assemble the pizza, add a layer of BBQ sauce, then the seasonings, then the cheese, top with BBQ chicken, and lastly sprinkle with diced red onion.

Notes

Top Tip~Don't over-sauce the pizza! BBQ sauce burns easily.
Always preheat the pizza stone!
This is non-negotiable for the added crispiness.
Should I use room temperature dough?
Yes! Cold dough is harder to stretch and more likely to tear. Let your dough sit out 30 to 60 minutes before shaping.
How do you store leftovers?
Store your leftovers in an airtight container in the fridge for up to 3 days.
How can the kids help? 
  • Roll out the dough using the roller.
  • They can smear the BBQ sauce all over the pizza dough. 
  • Have them assemble the pizza before it goes in the oven!
