Fully Loaded Air Fryer Sweet Potatoes

These Fully Loaded Air-Fryer Sweet Potatoes are super tasty and SO easy to make. They are crispy on the outside and tender on the inside and are loaded with a nutritious and indulgent balance of the perfect toppings. They are great served as a delicious side dish or the main meal. The whole family will love them!

Ingredients

  • 4 sweet potatoes
  • 2 tsp. olive oil
  • sharp cheddar cheese optional topping
  • scallions chopped into pieces, optional topping
  • 4-5 pieces bacon cooked, cooled, and chopped into pieces
  • 1 dollop plain Greek yogurt or sour cream

Instructions

  • Step 1 - Brush your sweet potatoes with the olive oil.
  • Step 2 - Place sweet potatoes in the air fryer and cook on 400 degrees for 35 - 45 min. Shake halfway through.
  • Step 3 - Meanwhile, cook your bacon. To make bacon in the oven set your oven to 400 degrees Fahrenheit. Line your bacon on a baking sheet lined with tin foil or parchment paper for easy clean up. Do not overlap your bacon.
  • Step 4 - Bake for 10 to 15 minutes or until your bacon reaches the desired crispiness. Remove from the oven and place on paper towel-lined plates to cool and absorb excess grease. Once cooled, chop into pieces and set aside.
  • Step 5 - Remove the sweet potatoes from the air fryer and allow it to be cool enough to touch. Make a slit in the sweet potato horizontally and vertically using a knife. Using your hands, push the sides of the sweet potato in so some of the inside comes out.
  • Step 6 - Load up that sweet potato. Top with shredded cheese, bacon bites, chopped scallions, and a dollop or plain Greek yogurt or sour cream.

Notes

How can you tell if your sweet potato is done cooking?
Insert a fork or knife into the thickest part of the sweet potato.
If it slides in easily with little resistance, the sweet potato is cooked through and tender. If it’s hard to pierce, it needs more time or cut it open. The inside should be soft, moist, and fully cooked through. If it’s still firm or hard in the middle, give it a little more time.
How healthy are sweet potatoes?
They are one of the top foods to have in your diet. One of the key nutritional benefits of sweet potatoes is that they're high in an antioxidant known as beta-carotene, which converts to vitamin A once consumed. Another bonus that I used is drizzling olive oil on top. Adding the olive oil increases the absorption of the beta-carotene.
How do you store loaded sweet potatoes?
Let them cool and remove toppings if possible to store separately. Wrap your potato in foil or place in an air tight container and store in the fridge for up to 4 to 5 days.
How can the kids help?
This is very easy recipe; the kids can help from start to finish. 
  • Wash and scrub the sweet potatoes with a vegetable brush.
  • Lightly coat the sweet potatoes with olive oil using a pastry brush.
  • Kids can help set the temperature and timer on the air fryer (with guidance).
  • Tear cheese slices or sprinkle shredded cheese on top.
  • Chop scallions or other soft veggies with a kid-safe knife.
  • Let kids arrange their toppings and make their own creations!
  • Encourage them to “design” their loaded sweet potato with a fun presentation.
