Healthier Cheeseburger Pie (Cast-Iron Skillet Version)

My version of a Healthier Cheeseburger Pie is made using all wholesome clean ingredients including ground turkey and skinny mashed potatoes. Topped with your favorite burger toppings it's like a real cheeseburger without the after guilt feeling.

Equipment

Ingredients

  • lb ground turkey
  • ½ cup chopped onion
  • salt to taste
  • ground black pepper to taste
  • 1 tbsp garlic powder
  • ¼ cup worcestershire sauce
  • 2 cups green beans frozen and thawed or fresh, ends cut off and cut into 1-inch pieces
  • 10.75 oz tomato soup
  • 8 - 10 slices American cheese
  • 3 large Yukon potatoes peeled and halved
  • ¼ cup plain greek yogurt
  • 4 cloves garlic minced
  • ¼ cup low-sodium chicken broth
  • 2 tbsp milk
  • 1 tbsp unsalted butter

Instructions

  • Step 1 - Place your potatoes in a large pot of water and bring to a boil. Add in your peeled potatoes. Cover, reduce heat to low, and continue simmering for about 20 minutes or until the potatoes are fork-tender.
  • Step 2 - Drain potatoes and place them back in the pot along with the garlic, Greek yogurt, chicken broth, milk, and butter, and mash it all together until smooth.  Season to taste with salt and pepper.
  • Step 3 - Meanwhile, in a large skillet, add onion and ground turkey and cook until meat browns. Drain in a colander and return to pan. 
  • Step 4 - Add salt, pepper, garlic powder, green beans, soup and Worcestershire sauce. Mix well to combine.
  • Step 5 - Spoon skinny mashed potatoes on top of ground turkey mixture and spread evenly.  
  • Step 6 - Lay pieces of cheese on top of skinny potatoes.  Bake, uncovered, in a 350° oven for 30 to 35 min. or until the cheese is bubbly and begins to brown on the edges. Serve with your favorite toppings.

Notes

Can you prep the pie ahead of time?
You can make your pie up to 8 hours ahead of time and place it in the fridge until you bake it. Make sure to cover it tightly.
How to store cheeseburger pie?
Store in an airtight container in the fridge for up to five days.
How to serve cheeseburger pie?
This recipe is served perfectly with Sweet Potato Fries or a light Pear and Gorgonzola Salad.
How can the kids help?
  • Using a kid-friendly potato peeler have them peel the potatoes.
  • Let them mash the potatoes up using a potato masher.
  • Have them layer the cheese on top at the end.
  • Teach them how to snap off the ends of green beans.
