    Chocolate Covered Banana Peanut Butter Ice Pops

    First of all, these chocolate covered banana peanut butter ice pops are life changing.  So, I just had my third child a little over a month ago.  After each child it has been more difficult to get the weight off.  I know my daughter is only six weeks old now so I am not putting any pressure on myself, but I am adapting to watching what I eat again. 

    Lately, I've been having those late night sweet tooth cravings and it has been scorching out.  That is where the idea to make these ice pops came in.  They were incredibly easy to make and even my kids like them, so it's a double win.  These pops only need 5 ingredients and you blend them all and voila!  Taylor and Luke helped me make them so of course we had to add chocolate chips because they are there favorite.

    Ingredients to make these delicious pops

    You will need

    1. 2 bananas
    2. 1 cup plain greek yogurt
    3. ¼ cup pure maple syrup
    4. 1 tbsp natural peanut butter
    5. 2 cups dark chocolate chips
    6. 1 tbsp coconut oil
    7. walnuts for topping (optional) - the possibilities here are endless 😉

    I also bought this cute little popsicle mold from Amazon for only $10.99 that comes with a cleaner, a funnel, and 30 popsicle bags.

    How to make these pops

    These are super simple to make.  Put everything into a blender - bananas, yogurt, maple syrup, and peanut butter.  Blend away until smooth. I use the Ninja Blender if you're in the market for a new one.  Pour mix into a small mixing bowl and fold in ½ cup chocolate chips.  Pour the mix into the popsicle mold and place in freezer for 2 hours, or until frozen.  Line a baking sheet with parchment paper and set it in freeze for about 5 minutes.

    Remove the ice cream bars and tray from freezer.  Take bars out of mold and place on parchment paper.  Put back in freezer while you melt the chocolate.  In a microwavable safe bowl place add remaining 1½ cups of chocolate and 1 tbsp of coconut oil.  Place in microwave in 30 second increments until small bubbles are formed.  Mix until chocolate is smooth. 

    Remove chocolate bars from freezer and one by one dip into melted chocolate and place back on parchment paper.  Toss chopped walnuts on top.  Continue until all pops are done and then place back in freezer for another 5 minutes.  Eat right away and store in freezer until ready to devour!

    Equipment

    • blender
    • small mixing bowl
    • ice pop mold

    Ingredients

    • Pour mixture into a small mixing bowl and fold in ½ cup of chocolate chips. Pour mixture into the popsicle mold and place in freezer for 2 hours, or until frozen. Line a baking sheet with parchment paper and set in the freezer for about 5 minutes.
    • Remove the ice cream bars and tray from the freezer. Take bars out of mold and place on parchment paper lined baking sheet. Place bake in freezer while you melt the chocolate.

    • Eat right away or store in freezer in an airtight container lined with parchment paper to prevent sticking to tupperware.

    Notes

    How can my kids help?  Help sprinkle the walnuts on top and throw all the ingredients into the blender and help press the buttons.
