    Creamy Cucumber, Tomato, and Chickpea Pasta Salad

    This creamy cucumber, tomato, and chickpea pasta salad is a mix of cool, crunchy vegetables!  The combo of ingredients gives this salad a satisfying bite that is perfect for any potluck side.  Of course this salad is the absolutely perfect side for Memorial Day Weekend, as well!  You can always leave out the pasta too, but I decided I needed it.  So, instead of using your regular old pasta I used chickpea pasta.  This dish only takes 15 minutes to makes, as well!  You can't beat that!

    Benefits of chickpeas

    According to the Dietary Guidelines for Americans, chickpeas are part of the legume family.  Legumes are an excellent source of protein.  In addition, they also provide other nutrients that are found in seafood, meats, and poultry, such as iron and zinc.  They are an excellent source of dietary fiber and of nutrients, such as potassium and folate. 

    Because legumes have a similar nutrient profile to foods in both the protein group and vegetable group, they may be thought of as either a vegetable or a protein and can be counted as either.  The dietary fiber in a ½ cup of canned chickpeas is 8.1 and the amount of calories in ½ cup is 176.  Chickpeas should definitely be added to your diet, if they aren't already.  I have a delicious recipe for roasted chickpeas that I eat as a snack.  Click here to check it out!  Roasted Chickpeas!

    Ingredients to make this dish

    You will need ½ cup of light mayo, ½ cup of crumbled feta cheese, 1 tbsp of chives, plus more for garnish, 1 tbsp of dill, plus more for garnish, 1 tbsp of lemon juice, ¼ tsp of kosher salt, ¼ tsp of ground black pepper, 1 large cucumber, 1 pint of cherry tomatoes, ½ medium red onion, finely diced, and 1 cup of cooked and cooled chickpea pasta.     How to make this chickpea pasta salad

    First, whisk mayo, feta, chives, dill, lemon juice, salt and pepper in a large bowl.  Add cucumber, tomato, onion, and chickpea pasta and toss to coat.  Garnish with more chives and dill, if desired!  This makes about 6 servings!

    Ingredients

    • Add cucumber, tomatoes, onion, and chickpea pasta and toss to coat.
    • Garnish with chives and dill, if desired.
