Fried eggs, sausage and spinach skillet with tomato aioli is anything, but ordinary. First of all, anything that has a dippy egg served over top is that much better! I am a huge fan of egg yolk drizzling all over my meal. Served over seasoned turkey sausage and sauteéd spinach, this dish is everything.
Each plate gets an egg of their own, so you have all the yolk you need to really give the sausage a nice coating. I served this with a side of tomato aioli on some fresh whole-grain french bread and it was oh so perfect! Dark leafy greens and whole-grain toast make this breakfast-for-dinner egg combo a no-brainer alternative to takeout, when you're rushed!
Ingredients to make this dish
I decided to make this meal with turkey sausage. You can use regular sausage, if desired, but make sure it's 80/20. That's 80% lean to 20% fat ratio. The reason I choose turkey sausage is because it has about 140-160 calories and 7-10 grams of fat, while pork sausage has 290-455 calories and 23-88 grams of fat per link. That's hundreds of calories and fat grams dodged per link. Once you decide which type of sausage you prefer you will need 6 ounces of it. Hickory Farms turkey sausage is a good brand to use if your local supermarket doesn't sell turkey sausage, but most do.
You will also need 1 garlic clove, halved, and 4 slices of crusty whole-wheat french bread. I recommend buying fresh bread the day that you decide to serve this meal. You'll also need 1 tablespoon of unsalted butter, ¼ cup of low fat mayonnaise, 1 tablespoon of tomato paste, 1 teaspoon of lemon juice, ¼ tsp. of kosher salt, divided, plus a pinch, and 1 tablespoon of extra-virgin olive oil.
Another option you can choose between is using kale or spinach. They are both highly nutritious and associated with several health benefits. While kale has more than twice the amount of vitamin C as spinach, spinach provides more folate and vitamin A and K. Both are linked to improved heart health, increased weight loss, and protection against disease. So, when it comes down to it, it's basically which do you think tastes better? I always choose spinach! Once you decide, you will need 8 cups of either and chopped.
You will also need 2 scallions, sliced and ¹⁄³ cup of water. Also, 4 large eggs, and a pinch of ground black pepper. I made this dish in a large skillet. I have all Calphalon pans and can't complain.

How to make this breakfast for dinner
To make this delicious eating well egg dish first you need to rub the cut side of the garlic on both sides of the bread. Toast the bread and butter each slice. Set aside. Then, grate the remaining garlic into a small bowl and stir in the mayo, tomato paste, lemon juice, and ¹⁄8 tsp. of salt. Set that aside. Next, heat oil in large nonstick skillet over medium-high heat.
Add the sausage and cook, breaking up the large pieces with a wooden spoon, until almost cooked, about 3 minutes. Add the spinach or kale (whichever you prefer), water and ¹⁄8 tsp. of salt; cook, stirring occasionally, until the sausage is cooked through and the spinach is wilted, about 2 minutes more. Transfer to a serving platter or divide among 4 plates.
Last, crack eggs into the pan and sprinkle with the remaining pinch of salt and pepper. Cook for 1 minute. Cover and cook until the whites are just about set, about 1 minute more. Top the spinach with the eggs and serve with the aioli and the toast.
