Who doesn't love Shrimp Franchaise and when it's healthy shrimp franchaise, it's even better 🙂 This is another recipe derived from the book my Grandma had given me. Only thing, she gave me one for chicken franchaise, but I know her and I both love shrimp so I think she'll be okay with it.
So, the trick to good shrimp is making sure your shrimp is either A. totally fresh or B. totally thawed! I've made this dish in the past and forgot to take the shrimp out of the freezer and it wasn't thawed all the way. When that happens the flour doesn't stick to it well enough! You need your flour to stick to form the franchaise coating on the outside.
Ingredients to make this dish
You will need one lb. shrimp, peeled, deveined and butterflied, 2 eggs, 1 cup whole wheat flour, ²⁄3 cup low sodium chicken broth, ¾ cup white cooking wine, the juice of a lemon, ¹⁄3 cup chopped white onion, 1 cup chopped tomatoes, and 4 tbsp. unsalted butter. For the seasonings, you will need 2 tsp. of garlic powder, 1 tsp. of parsley, 2 tsp. of kosher salt, and 2 tsp. of ground black pepper. You will also need 5 tbsp. of avocado oil
Directions to make this meal
First, whisk the eggs, garlic powder, parsley, ground pepper and sea salt in a small mixing bowl. In another medium sized mixing bowl pour in the whole wheat flour. Next, heat 4 tbps. olive oil in a large frying pan over medium heat. Remove all shells, veins, and tails from shrimp. Dip the shrimp in the egg mix then flour and cook until lightly brown, then flip over and brown the other side, as well.
In another medium skillet add 1 tbsp. olive oil and heat to medium. Next, add onion and cook until browned. Then, add the wine, lemon juice and broth and bring to a boil. Finally, add the tomatoes and butter and simmer for 3-5 minutes. Last, add the cooked shrimp to the wine sauce and cook for 2-3 minutes.
Serve the shrimp and sauce over whole wheat pasta of your choice or your favorite veggie and ENJOY!!!!!!!!!!!!!!
