When I think of healthy lunches I don't get as excited when I compare them to my breakfasts and dinners. That was when I really started to think of fun ways to pep myself up to enjoy my mid-day meal. I'm not gonna lie, my usual go-to is eating leftovers from dinner, which is an awesome option. When I don't have any leftovers though I found myself just grabbing a yogurt or something quick, easy, and not fun. These are all meals you can make ahead of time during your meal prepping or you can whip them up right then and there.
