First of all, these whole wheat banana chocolate chip pancakes were SO fun to make 🙂 Taylor and Luke helped me as much as they could. They loved mashing the banana and I let them sprinkle in the cinnamon. Once I measured out the whole wheat flour they poured that into the mix for me too. They had a ball and then got to devour an entire pancake for themselves.
These are also super kid friendly because they are more like mini pancakes so you don't waste any food (what I'm all about). The first time I made these I let Taylor help me squeeze some of the syrup too, which I regretted and didn't let them help this time because this is what Tay's hair looked like last time.
Ingredients for these pancakes
You can also add in some protein powder to make them protein pancakes! I have also added some of my Vital Proteins collagen powder before for some added collagen in the past. I also love to make any pancakes on a square shaped non-stick skillet because you can fit so many more cakes than on a circular pan. I've linked some options below.
OXO Good Grips Non-Stick Square Griddle
All-Clad Non-Stick Square Griddle
You will need:
- 1 ½ mashed banana
- ¾ cup whole wheat flour
- 1 tsp. pure vanilla extract
- one tsp. cinnamon (or more if your child helps pour it in)
- 2 eggs
- 1 tbsp. pure maple syrup
- ¼ cup dark chocolate semi-sweet morsels
- 1 tbsp. unsweetened vanilla almond milk
- coconut or avocado cooking spray
How to make this breakfast
- Place banana in a bowl and mash it up.
- Add whole wheat flour, pure vanilla extract, and cinnamon.
- Mix in egg, pure maple syrup, and unsweetened vanilla almond milk. Fold in the chocolate chips using a rubber spatula.
- Once mixed through heat up a non-stick frying pan and spray with cooking spray.
- Spoon out mixture into mounds and flatten with a spatula. Cook each side for about 5 min.
- Remove from pan and serve with a drizzle of pure maple syrup.
- Enjoy with a smile 🙂 and/or some turkey bacon!

Ingredients
- 1½ mashed bananas
- ¾ cup whole wheat flour
- 1 tsp pure vanilla extract
- 1 tsp cinnamon or more if your child helps pour it in
- 2 eggs whisked
- 1 tbsp pure maple syrup
- ¼ cup dark chocolate chip morsels
- 1 tbsp unsweetened vanilla almond milk
- coconut or avocado cooking spray
Instructions
- In a large mixing bowl add bananas and mash.
- Once bananas are mashed add in flour, vanilla extract, and cinnamon. Mix well to combine.
- Mix in eggs, pure maple syrup, and almond milk. Fold in chocolate chips using a rubber spatula.
- Meanwhile, heat a square shaped non-stick pan and spray with cooking spray.
- Spoon out mixture into mounds and flatten with spatula. Cook each side for about 5 minutes.
- Remove from pan and serve with a drizzle of pure maple syrup and a side of turkey bacon if desired 🙂
