    Zucchini Bread

    Well, well, well what do we have here?  That's right, zucchini bread under the dessert category!  What is that doing here?  Nope, it's not a mistake 🙂  I've concocted this recipe up from one of my Grandma's famous recipes, but instead of making it as an appetizer, that would include more veggies (besides the zucchini),  I put a spin on it and decided to make it sweet.  Boy, is this one to save for the guests!  It came out super moist! 

    Moist bread is the way to go, especially when you're eating it as is and aren't spreading any condiments on top.  Not to say you can't, but this bread is so savory, that you don't need any condiments to make it more tasteful than it already is 😉  A suggestion I would also make is to use the zucchini pretty shortly after you buy it because fresh veggies are way tastier than "day olds". 

    The freshness also adds to the moistness, which in my opinion makes the bread what it is!  This bread was served as a dessert in my house, but some other times you could also use this could be during a brunch or even as an appetizer!

     Ingredients to make this bread

    You will need coconut or avocado cooking spray, 2 cups of whole wheat flour or almond flour, 2 tsp. kosher salt, 1 tsp. baking soda, 1 tsp. baking powder, 2 tsp. cinnamon plus extra for sprinkling on top, 2 whole eggs and 1 egg white, ½ cup applesauce, ½ cup avocado oil, 2 tsp. pure vanilla extract, 1 cup pure maple syrup, 2 medium zucchini, skin removed, sliced thin, then cut into quarters.  You will also need a loaf pan.  Here is a good set of 2 that are non-stick!

    How to make zucchini bread

    First, preheat oven to 350° and spray a loaf pan with the cooking spray.  Next, mix all ingredients together except the zucchini.  Then, using a spatula fold in zucchini pieces.  Mix will be lumpy.  Finally, pour zucchini mixture into prepared baking loaf, sprinkle with cinnamon and bake for 1 hour.  Let cool completely and then slice into pieces 🙂

    I also love having my kids help me make anything!  Luke and Taylor helped add the zucchini into the bowl.  They helped me add all the ingredients in if you wanted to incorporate your kids this is the perfect dish because everything is added into one bowl 🙂

    Equipment

    • mixing bowl
    • loaf pan
    • cutting board
    • paring knife

    Ingredients

    • coconut or avocado cooking spray
    • 2 cups almond flour or whole wheat flour
    • 2 tsp kosher salt
    • 1 tsp baking soda
    • 1 tsp baking powder
    • 2 tsp cinnamon extra for topping
    • 2 whole eggs
    • 1 egg white
    • ½ cup unsweetened applesauce
    • ½ cup avocado oil
    • 2 tsp pure vanilla extract
    • ¾ cup pure maple syrup
    • 2 medium zucchini skin removed, cut into quarters

    Instructions

    • Preheat oven to 350° and spray a loaf pan with cooking spray. Set aside.
    • In a large mixing bowl combine all ingredients except zucchini. Mix well to combine.
    • Fold in zucchini stirring until mixed well.
    • Pour into prepared loaf pan. Sprinkle the top with cinnamon and baking for 1 hour.
    • Let cool completely once done cooking. Slice into pieces and enjoy!

    Notes

    What can my kids do?
    Have them measure and mix all ingredients together!
