These Black Bean Veggie Burgers are made from scratch and have the most insane flavor. They are also super easy to make! I baked them instead of frying them to alleviate using excess oil and they are made with all wholesome ingredients. Perfect meal for a quick, healthy, weeknight dinner idea!
First of all these black bean veggie burgers are my new favorite way to eat burgers! The flavoring is unreal! I had mentioned in a prior post how I read the book, "How not to die", by Michael Greger. This book is definitely one I recommend! It talks a great deal about how veggies and grains should be what you're mainly eating.
Since reading this book I have been trying to make a conscious effort to eat more foods without meat and dairy and more with veggies and grains. Incoming these delicious vegetarian black bean burgers.

Ingredients for this meal
You will need the following ingredients:
- 2 (14 oz) cans of black beans - drained, rinsed, and patted dry. I like to drain my beans in a colander because you can rinse them in there as well. Use paper towels to pat dry your beans as best you can.
- red bell pepper and white onion - both of these veggies will need to be diced. You can either dice them by hand or I have the Cuisinart Smart Stick that will dice your veggies for you. It is one of my favorite kitchen appliances.
- garlic cloves - you will need minced garlic for this recipe. I do love and recommend using fresh garlic but sometimes we all need to cut corners. I usually have Spice World Garlic in my fridge for when the corners need to be cut 😉
- ketchup - I recommend Good Food For Good Organic Ketchup, no sugar added, whole 30 approved
- whole wheat buns - omit the bun for a gluten-free meal or use gluten-free buns or use lettuce and make a burger lettuce wrap
How to make these easy burgers
Step 1 - Preheat oven to 375 degrees Fahrenheit and line a baking pan with parchment paper.
Step 2 - Using a potato masher, mash beans until they are mashed with some whole bean pieces left.
Step 3 - Add oil, red bell pepper, white onion, garlic, cumin, garlic powder, onion powder, ground black pepper, salt, paprika, bread crumbs, eggs, Worcestershire sauce, and ketchup. Stir until well combined.
Step 4 - Using clean hands, form patties and line them on your prepared baking tray. This recipe will make about 8 burgers.
Step 5 - Bake in the oven for 25 minutes. Remove from oven and assemble. To assemble the juicy burgers, slice whole wheat buns in half and add your burgers. Top with your favorite toppings and devour.
How to make vegan burgers
If you want to make vegan black bean burgers leave out the eggs. Try out a flax egg instead. When ground flax seeds and water combine, the mixture take on a gelatinous consistency, similar to egg whites. To replace 1 egg, combine 1 tbsp of ground flax seed with 3 tbsp. of water. Let the mixture sit for 20 minutes before adding to your black bean mix.
Substitutions and Add-ins
There are a ton of different ways to change up the taste of your black bean burgers. Here are a few suggestions on different options to add into your mixture.
- cheese - you can add any cheese you feel would enhance the flavor of your burgers. I would recommend reduced-fat feta, cheddar, mozzarella, blue cheese, provolone, parmesan, or any other type I've left out. Just be sure the cheese is shredded if it comes in a block.
- brown rice or quinoa - if you want to add in some more carbs, cook up some brown rice or quinoa and then add about ½ cup into your mixture.
- sauteed onions - who doesn't love a good sauteed onions? Add about 1 tsp of oil to a small pan. Add in your chopped onions and cook until translucent, about 5 minutes.
- sweet potato - peel a sweet potato, dice it up and add in about ¼ cup to your black bean mixture.
Topping Ideas
You can really top your burgers with anything you want. I've listed some ideas for you below, but the possibilities are quite endless!
- melted cheese (yes add more cheese)
- ketchup
- mustard
- lettuce
- tomato
- drizzled balsamic vinegar
- chipotle mayo
- red onions
- pickles
- jalapenos
- hummus
- spinach
- salsa
- guacamole
- shredded iceberg lettuce
- plain greek yogurt
Tips and FAQ's
The egg helps the ingredients to bind well, but also make sure the more pulverized your ingredients are, the more they will stay together.
You might have mushy burgers because you didn't pat dry your beans enough. This is an important step that needs to happen! Beans are full of moisture so if you skip this step all the moisture will cause your burgers to become mushy.
In case you happen to have some extra burgers on hand and want to save them, store them in an airtight container in the fridge for 3 to 5 days. Keep them in a single layer and not on top of one another.
