    Who loves doesn't love Edible Cookie Dough? Who loves cookie dough, even more, when it's HEALTHY cookie dough? This insanely easy, quick, treat is one for the books. These bites are also NO BAKE and you only need 6 ingredients to make them.

    I can't even explain how insanely tasty these cookie dough bites are. They are creamy, chocolatey, and so satisfying! I have been eating them when I get those late-night cravings, but don't want to feel guilty after eating something.

    They are the perfect one-bite dessert and are made with all vegan ingredients!

    This homemade cookie dough gives you that pass to eat the cookie dough batter and have it actually be safe. Looking for other healthy desserts to try, you should definitely try my No Bake Energy Balls or my Flourless Banana Muffins (made with chickpeas).

    Ingredients to make no-bake cookie dough

    This healthy cookie dough recipe is super easy to make! This recipe has no flour and is made without eggs. You also don't need baking soda or baking powder since this cookie dough is a NO-BAKE recipe. You will need the following ingredients.

    • chickpeas - drained and rinsed, when chickpeas are mashed and mixed with certain ingredients they taste precisely like real cookie dough! The texture replicates the dough exactly!
    • light brown sugar - brown sugar is perfect for this recipe because brown sugar is hygroscopic so it will attract and absorb the liquid in the dough.
    • unsweetened vanilla almond milk - using a small amount of liquid helps keep the cookie dough moist.
    • pure vanilla extract - vanilla extract is great for desserts because it chemically adds more flavor and also brings out the flavor of other ingredients.
    • natural peanut butter - peanut butter enhances the richness of this raw cookie dough. It also adds extra protein.
    • chocolate chips - I recommend using mini chocolate chips for this recipe. Using mini size will help the bites stick together better and fit into each bite easier than the regular-size chocolate chips.

    Step-by-Step directions for edible cookie dough

    Step 1 - add the chickpeas, brown sugar, almond milk, and vanilla extract to a blender.  Blend until smooth.

    Step 2 - add the peanut butter and blend again! 

    Step 3 - Pour your mix into a medium-sized mixing bowl and fold in the chocolate chips.  You are more than welcome to eat this deliciousness right away, but I like to put it in the fridge for about an hour. If you are in need of a good blender I've linked the one I use below. 

    Step 4 - Remove from the fridge and roll the cookie dough into bite-sized balls. Store your balls in a Tupperware on parchment paper in the fridge. Take one out and pop it in your mouth when you're in the mood for a delicious, satisfying bite. Voila!

    Serving Suggestions

    I love taking a spoon out of the drawer and sticking it in my edible cookie dough and going to town! You can also serve this delicious cookie dough on top of some vanilla ice cream or even place it in a blender with some extra almond milk and you've got yourself an award-winning smoothie!

If you are a smoothie fan you just make your smoothie in the attachment and take it and go!

    How can the kids help

    My favorite part of cooking is when my kids help me 🙂 They absolutely love to get dirty and when anything I'm making consists of doing just that, it's even more fun for them to help out. Here are a few suggestions for including your kids in this recipe.

    1. Have your child help you dump all the ingredients for the cookie dough into the blender. Teach them the measurements as you add each ingredient.
    2. After you fold in the chocolate chips, make sure you let each of your kids get a nice spoonful of cookie dough out of the blender and devour every bite 😉
    3. Teach your child how to roll the bites into balls using clean hands.

    Is this cookie dough safe to eat?


    Absolutely! That's the best part. There is no raw egg used in this batter so you can eat the entire bowl and you won't get sick!

    Yes! You can get super creative here and create a ton of different variations. Try using sprinkles, chopped nuts, or caramel morsels, just to name a few.
