    If you're like me, summertime means fresh fruit, lighter desserts, and enjoying colorful, feel-good treats with friends and family. That’s why I’m so excited to share this Almond Cookie Fruit Tart with you. It’s a beautiful, naturally sweet dessert that’s as healthy as it is delicious.

    Who doesn't love a good dessert? No one I ever met 🙂 Even more so, why you should try this fruit tart with almond cookie crust. This tart has it all! A soft, chewy almond cookie crust and a creamy topping that’s rich and satisfying, and topped with vibrant seasonal fresh fruit for natural sweetness and nutrition. This would make a perfect 4th of July dessert!

    Whether you're hosting a brunch, bringing dessert to a BBQ, or just craving something special for a weeknight, this quick almond tart for summer is a stunning centerpiece and a nourishing indulgence.

    Ingredients to make Almond Cookie Fruit Tart

    Here is a photo of all the ingredients needed to make this low-sugar fruit tart recipe. The full recipe card is located at the bottom of this post.

    The ingredients needed to make this recipe with labels included.
    • rolled oats or old-fashioned oats - oats help create a chewy texture and help bind the dough. Oats also add extra protein to this dessert.
    • unsalted almonds - almonds are added to the cookie base to enhance the flavor and create a softer or tender cookie.
    • pure maple syrup - a natural sweetener that adds moisture and a sweet, rich flavor. This ingredient helps make this a no-refined sugar dessert.
    • pure vanilla extract - helps enhance the flavor of the ingredients and adds a more balanced taste.
    • unsalted butter - use cold butter. Using cold butter helps prevent the batter from spreading too much when baked. Which helps result in a more structured cookie.
    • egg - whisked. The egg is brushed onto the cookie before baking, giving it a crispy outside, but keeping the inside light and fluffy.
    • fresh berries - choose your favorite. Best fruits to use in my opinion are blackberries, raspberries, blueberries, and strawberries.
    • heavy cream - this ingredient is used to make the cream topping. Heavy cream whips up nicely giving the final product a more desired look.
    • plain Greek yogurt - makes the whipped cream lighter and provides better structure.

    Directions for this easy almond cookie fruit tart

    Step 1 - First, preheat oven to 350°.F  Line a baking sheet with parchment paper.  To make the almond flour crust, start by combining oats and almonds in a blender or food processor until they're the texture of sand. 

    Step 2 - Add ½ cup of maple syrup, vanilla, and salt.  Then add butter, cut into slices, evenly on top.  Pulse until combined. 

    Steps one and two of the cooking process to make this recipe.

    Step 3 - Turn dough out onto prepared baking sheet and using wet hands press out into a rectangle or you can make 4 small 3 x 3 inch circles with the batter to have individual fruit tarts. Then brush with egg.  

    Step 4 - Bake the crust until browned, rotating halfway through, about 25 minutes. Let cool 10 min. before transferring to a serving dish. Meanwhile, in a large bowl, beat cream and the remaining 3 tbsp. of maple syrup until stiff peaks form.

    Step 5 - Gently fold in yogurt. 

    Step 6 - Assembling the fruit tart - Spread the whipped cream over the crust.  Arrange fruit on top and serve! Cut into slices if using a rectangular shape, or serve the circular shape whole.

    How to make homemade heavy cream

    • ¹⁄3 cup unsalted butter
    • ¾  cup 2% milk

    Step 1 - Place the milk in a bowl and set aside.  You do not want it fresh from the fridge when you mix the ingredients, or it will be too cold.  Melt the butter in the microwave for 15 seconds until fully melted. 

    Step 2 - Combine the 2 ingredients and mix with a hand mixer until well blended.  Use immediately.  Hand Blender - Cuisinart Hand Blender! 

    Substitutions and Variations

    Pure Maple Syrup - you can swap this ingredient out for pure honey if desired.

    Heavy Cream - you can also use coconut cream or cashew cream for non-dairy substitutes.

    Tips and FAQ's

    Can I make this tart ahead of time?


    Yes! You can prepare the almond cookie crust a day in advance. Just store in the fridge in an air-tight container. Assemble the tart with fruit about 1–2 hours before serving to keep everything fresh and vibrant.

    Can I make this recipe gluten-free?


    Yes! Replace the whole wheat flour with almond flour.

    How to store leftovers?


    Store leftovers in an airtight container in the fridge. Store the cream and cookie crust separately if possible. The tart is best enjoyed within 2–3 days. The crust may soften slightly over time, but it will still be delicious.

    Notes

    How can the kids help?
    • Let them measure and pour ingredients into the blender.
    • Spread the creamy topping onto each tart. 
    • Arrange fruit pieces on the tart once it's filled. Let their creativity run wild!
    • Help with clean-up (my personal favorite) —teaching that cooking includes wiping the counters and rinsing the dishes!
