    Stuffed Avocado Tacos

    Stuffed avocado tacos is such a great change to your ordinary taco!  I don't know why I didn't think of this idea sooner!  It's less carbs at night, which is always a plus in my eyes and who doesn't love avocados?  Avocados are one of those ingredients that people refer to as a, "superfood". 

    They contain 20 different vitamins and minerals, some of which include, potassium, folate, vitamin k, C, E, B1, B2, B3, B5, B6, and A to name a few.  Avocados are also loaded in fiber!  For this reason avocados are linked to weight loss, reduce blood sugar spikes, is is strongly known for helping to link your risk of many diseases.  So, why wouldn't you swap out your wraps and tacos shells for an avocado?

     Ingredients to make this dish

    To make stuffed avocado tacos you will need the following!  I've linked a few items below in case your kitchen needed some restocking!

    1. 1 tbsp avocado oil
    2. 1 lb ground turkey
    3. ¼ cup chopped onion
    4. ½  tsp chili powder
    5. 1 tsp cumin
    6. 1 tsp oregano
    7. ½ tsp onion powder
    8. ½ tsp garlic powder
    9. 1 tsp paprika
    10. ¼ kosher salt
    11. ¼ ground black pepper
    12. ¼cup low-sodium beef broth
    13. ½ cup low-sodium black beans rinsed
    14. ¼ cup salsa
    15. 1 tsp lime juice
    16. 2 ripe avocados, halved and pitted
    17. ½ cup shredded Mexican cheese blend
    18. ½ cup of plain greek yogurt

    Directions to make stuffed avocados

    First, start off by heating oil in a medium skillet over medium-high heat.  Next, add the ground turkey and onion and cook until the turkey is no longer pink and the onion has softened; about 10 minutes. 

    Drain then add back to the pan and pour in the low-sodium beef broth.  Then, add the chili powder, cumin, oregano, onion powder, garlic powder, salt, pepper, and paprika. Stir to combine.  stir in the black beans and salsa.  Stir and cook until heated through, about 5 minutes. 

    Cut the avocados in half lengthwise and scoop out the flesh.  Transfer the flesh to a small bowl and add the lime juice and mash with a fork until chunky-smooth.  I am one that loves salty foods so I always mix in about ½ tsp of kosher salt.  Last, fill each avocado with the turkey mix and top with cheese and your homemade guacamole and top with a dollop of plain greek yogurt.

    Equipment

    Ingredients

    Notes

    How can my kids help?  Have your kids mix in all the seasonings and mash up the avocado 🙂
